What are the difference between Kali Linux LXDE version and normal version on the basis of performance and customization process?
I would recommend using Kali Linux main version as it is more better (contains more tools and is easy to customize) whereas LXDE version is a Kali Linux with few cut offs. If you want to use then use main version of Kali. There’s no fun in using a penetration testing distro with cut offs. If you do not have enough system resources then only go for LXDE version (the only thing one can do in such case). I also recommend using Penetration testing distros in VM for testing as whenever you may feel to switch to another distro you can without any problem unlike dual booting stuff. I hope it helps.
